&lt;p&gt;Grilled pork belly, house-made buttermilk biscuits, and two poached eggs all topped with Hollandaise sauce, served with a side of mixed greens and a ‘potato nest.’&lt;/p&gt;
&lt;p&gt;Why it’s the best:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;That pork belly is simply NOT your everyday pork product.  Not only is Berkshire pork revered for its marbled fat and clean sweet taste, ours is hormone and antibiotic free. &lt;/li&gt;
&lt;li&gt;We put a lot of work in to that belly.  In fact, it takes about two days to prepare before we can even serve it to you smothered in Hollandaise.  The reason is that we cure it for 24 hours in salt and sugar first.  The next day, we smoke it in house and, then, confit it in its own fat - now, it’s ready to be ordered.  As soon as you say the word, we glaze it with a pork jus and grill it.  Cured, smoked, confited, glazed, and grilled - who else in Brooklyn spends 48 hours on your eggs benedict?&lt;/li&gt;
&lt;li&gt;Our buttermilk biscuits are baked fresh at the start of every brunch.  They’re buttery and crumbly and delicious - the perfect place for a pork belly to rest after a 48 hour journey.&lt;/li&gt;
&lt;li&gt;All our eggs are organic and free-range.&lt;/li&gt;
&lt;li&gt;If a hash brown and a latke had a hot one-night stand, the illegitimate child would be our ‘potato nest.’  We deep fry it.  It’s good.  Really good.&lt;/li&gt;
&lt;li&gt;Our side of mixed greens isn’t a small wilted garnish, like it is at most brunch places.  We dress it with a house-made vinaigrette and it is oh-so-tasty.&lt;/li&gt;
